Ruby-crimson with brick-red tinges; this perfectly-matured shiraz has classic Heathcote white pepper, iron stone and star anise on the nose, with notes of smoky bacon and leather, espresso and mocha, vanilla and clove oak, mellow, fine and dusty tannins, with still bright characters of blackberry bramble and dark cherry, juniper and licorice all finely-tuned balance with graceful length. Fine and integrated beautifully with age. $85 per bottle.
The wine was made from shiraz fruit picked from the best section of the vineyard, high on a steep hill, where the mineral content of the soil is greatest, and the fruit grown, most intense. From the excellent 2008 Heathcote vintage (rated 9/10 by Halliday Australian Wine Companion) with a parcel re-released at optimal cellar age for this rare and impressive wine. $85 per bottle.

Best enjoyed on a special occasion with friends and family, roast dinners and cheese. Carefully matured, this parcel of the 2008 vintage has been brought up from the cellars, freshly labelled, sealed with a wax closure and presented in engraved wooden gift boxes.
The fruit was handpicked at one-tonne to the acre and gently destemmed before being fermented with natural yeasts in open-top stainless-steel fermenters. It was hand plunged and then pressed off the skins and matured in new (20%) and seasoned (80%) French oak barrels for 12-months before blending and bottling without filtration and put down to rest into ideal cellar conditions. A real bells-and-whistles wine, already cellared to perfection, it is best enjoyed with someone you would like to impress!
